Summary:

Ruthie’s Steak & Seafood, the best fine dining experience in the Quad Cities, is seeking a high-energy leader focused on providing exceptional service ensuring each dining guest has a stellar experience. We are searching for a Fine Dining Room Manager who is able to build a talented, dedicated service wait staff and guide them towards a common goal. The Fine Dining Manager must have a passion for producing and creating unique unforgettable dining experiences. Provides leadership to restaurant service team through frequent training on fine dining table service, wine presentation and education on restaurant beverage menu. Evaluates steps of service procedures, reviews standards, identifies methods for increasing efficiency or effectiveness and responds proactively to challenges that arise. Works with individual Team Members on service performance, techniques for improvement and provides measures to exceed restaurant expectations. Ensures wine and liquor inventory par levels are maintained by calculating inventory, reviewing sales data and places orders accordingly. Maintains a visible presence on the restaurant floor interacting with Guests and ensuring their dining experience meets the expectations. Communicates pertinent information to Team Members by conducting pre-shift meetings on a consistent basis. Communicates effectively, giving direction, support, timely feedback and recognition of performance. Works with Director of Food and Beverage, Executive Chef and Chef D’Cuisine on menu changes including beverage and wine menus. Conducts daily walk through of dining room and kitchen area to ensure sanitation, cleanliness and equipment is operational and functioning as designed. Reviews featured menu items with Chef on a daily basis. Remains up to date, knowledgeable and conversant on the origin and preparation of all seafood, produce, meats and specialty items featured on the Ruthie’s menu.

Essential Functions:

  • Provide exceptional guest service to all customers. Responsible for all department operational quality aspects.
  • Assists with preliminary menu development.
  • Develops, maintains, and implements service standards for the department.
  • Assists in the development of cost related parameters for the department.
  • Maintains expenses to meet budgeted or forecasted goals.
  • Responsible for scheduling all staff members and meeting designated payroll costs.
  • Oversees organization for fast and efficient functionality and service.
  • Develops and coordinates a program that meets all Iowa Department of Health, Internal controls and government rules and regulations. Must be able to obtain all necessary licenses as required by local, state and federal governments.
  • Responsible for tracking systematically, all critical areas of fine dining service.
  • Hires new employees and responsible for the development of all levels of the fine dining service team.
  • Performs periodic team member evaluations and further development strategies including disciplinary action.
  • Responsible for all relevant inventories including rotation, par levels, periodic physical inventories and discontinued inventory items. Coordinates new inventory items.
  • Forecasting and planning future parties and events.

Required:

  • ServSafe certified or equivalent.
  • Associate's degree (A. A.) or equivalent; 3-4 years related experience and/or training; or equivalent combination of education and experience.
  • Must have fine dining experience.
  • Must demonstrate excellent interpersonal and communication skills.
  • Must demonstrate organization skills the ability to multi-task planning and forecast skills.
  • Good driving record and the ability to be covered by the company insurance program to drive company vehicles is a plus.
